QUICHE FOR BREAKFAST. QUICK & EASY

12 Eggs, beaten
2 large zucchini, shredded or grated
3 large carrots, shredded or grated
1/2 teaspoon salt
butter for the pan

Preheat oven to 375F

1- In a bowl, mix together, the zucchini, carrots, eggs and salt.
2- Butter a 9 x 13 inch baking dish. Pour the egg mixture into the pan.

Bake 45 minutes.
